I have been the Director of Child Nutrition for 20 years. During this time, meal participation has increased each year. I have been presented with several opportunities over the years. One that I have enjoyed a great deal has been overseeing the cafeteria renovations in Dickinson ISD's most out-dated kitchen and dining areas. We began our renovation process with McAdams Jr. High School in 1997 and followed with the Dickinson High School in 2000. In 2005 Hughes Rd. Elementary and Silbernagel Elementary were remodeled to look as appealing as our new elementary school kitchens at Bay Colony and K.E. Little Elementary that opened in 2001. Out latest elementary school to open was San Leon in 2007. We opened the new Dunbar Middle School cafeteria in March 2004 and Barber Middle School cafeteria in fall 2008. I believe our students deserve good quality food each and every day and this is always of very high importance to me and my staff. Our most recent accomplishment was the USDA Silver Award with Todd Staples, Commissioner of Texas Agriculture and Bill Ludwig, USDA Southwest Regional Administrator here to present the award in May 2008. We completed our five-year Coordinated Review Effort (CRE) by the Texas Department of Agriculture in December 2005. This extensive review checks our compliance to the USDA regulations that we are required to implement and follow in order to participate in the National School Lunch Program. We were successful in having a "Perfect" review with zero violations. We also experienced our School Meals Initiative (SMI) with a "Perfect" outcome. The SMI is conducted with regard to our district's status in meeting the nutrition requirements of the Healthy School Meals Initiative.
Our department has received several Texas "Increased Participation" awards, Yearbook awards, Nutrition Education honors, Individual employee awards, and other recognitions through the years. Child Nutrition staff has received many scholarships for educational advancement, which is always a joy for me to enthusiastically support. We have had twelve managers graduate from Region IV Manager Academy with Level IV certification.
I am a registered dietitian whose previous experience includes school food service in Bryan and Galveston, Hospital Chief Clinical Dietitian, Texas Health Department Long-Term Care Surveyor, and Home Health Care Provider and Consultant for Acute-Care Hospitals. Laura Peck, BS Operations Supervisor
Laura handles the operational issues of our cafeterias. She is responsible for our sanitation and safety in the kitchen including our Hazard Analysis Critical Control Point program initiated by USDA. Rozzie Cloud, BS Nutrition Educator
Rozzie handles menu planning and directs efforts in nutrition education for our students. She implemented our district-wide wellness program along with many special marketing events that are planned for our students yearly who eat in the cafeteria.
